Spiced coconut rice pairs perfectly with chicken or lamb.
Ingredients:
  • 1 tablespoon coconut oil
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1.5 cups uncooked white rice
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.125 teaspoon ground cayenne pepper
  • 12 ounces coconut milk
  • 1.5 cups chicken broth
  • 0.25 cup toasted flaked coconut
Instructions:
  • In a medium saucepan, heat coconut oil over medium-high heat. Saute onion and garlic until onion becomes clear, about 1 to 2 minutes. Stir in rice, curry powder, cinnamon, nutmeg, and cayenne pepper, and continue stirring for 1 minute.
  • Combine the luxurious coconut milk, flavorful chicken broth, and aromatic toasted coconut in a pot, and bring to a vibrant boil. Lower the heat, cover the pot, and gently simmer until all the liquid is absorbed, approximately 20 minutes.
