Spiced dhal soup

Flavorful vegetable dhal soup - a hearty and satisfying meal for all!
Ingredients:
  • 18.40 gm vegetable oil
  • 1 onion, finely chopped
  • 2 tsp grated ginger
  • 5.00 gm ground cumin
  • 1/2 tsp Brand cayenne pepper, extra hot
  • 1/2 tsp ground turmeric
  • 500.00 ml red lentils, rinsed, drained
  • 1.5l vegetable stock
  • 200g plain yoghurt
  • 82.50 ml chopped coriander
  • 4 naan breads, warmed, to serve
Instructions:
  • In a large saucepan over medium heat, warm oil. Stir in onion and cook for 5 minutes until softened. Add ginger, cumin, cayenne pepper, and turmeric. Cook for 30 seconds, stirring, until fragrant.
  • Place the lentils into the pot along with the stock. Cover the pot and bring it to a boil. Lower the heat and let it simmer partially covered, stirring occasionally to avoid sticking, for about 20 minutes until the lentils are tender. Season with your preferred taste enhancements.
  • Garnish with yogurt and fresh coriander, and enjoy with warm naan bread.
