Cauliflower dhal soup

Cozy vegetarian soup with a touch of yogurt to balance the spices. Perfect winter comfort.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 1 tsp finely grated ginger
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 250.00 ml red lentils, rinsed, drained
  • 765.00 gm vegetable liquid stock
  • 500g cauliflower, cut into florets
  • 250.00 ml Greek Natural Yoghourt
  • Coriander sprigs, to serve
  • Pappadums, to serve
Instructions:
  • In a large saucepan over medium heat, warm oil. Sauté onion, carrot, and ginger for 10 minutes until softened. Add spices and cook for 30 seconds until fragrant. Mix in lentils, stock, cauliflower, and seasonings. Bring to a boil, then reduce heat and simmer covered for 20 minutes until everything is tender. Finish by stirring in half of the yogurt before serving.
  • Top the dish with the remaining yogurt and garnish with fresh coriander. Accompany it with crispy pappadums.
