Spiced fruit & ricotta triangles

Ingredients:
  • 375g pkt dried fruit medley
  • 125ml orange juice
  • 1 cinnamon stick
  • 200g low fat fresh ricotta
  • 12 sheets filo pastry
  • 50g butter, melted
  • 55g almond meal
  • Icing sugar, to dust
Instructions:
  • In a saucepan, combine the dried fruit, orange juice, cinnamon stick, and 1/2 cup (125ml) water. Bring to a boil, then lower the heat and simmer covered for 10 minutes. Cook uncovered until all the liquid evaporates. Remove the cinnamon stick and let it cool completely.
  • Preheat your oven to a toasty 180°C. Stir the velvety ricotta into the luscious fruit blend. Place a delicate filo sheet on a pristine surface. Gently coat it with a layer of luxurious melted butter. Sprinkle a generous tablespoon of almond meal on top. Cover it with another layer of filo pastry.
  • Spread 1/2 cup of the fruit mixture in the bottom right corner of the filo sheet. Fold the corner over to seal the filling, then fold the top right corner over to form a triangle.
  • Grease a baking tray and brush the item with melted butter. Bake for 15 minutes or until golden. Let it cool slightly before serving and dusting with icing sugar.
