Hazelnut cookies with strawberry filling - decadent treat ready in just one hour!
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 egg yolk
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup hazelnuts (filberts), toasted, skins removed and nuts ground (6 tablespoons)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/3 cup strawberry or raspberry preserves
Instructions:
  • Preheat your oven to 350°F. In a large bowl, use an electric mixer to combine butter and sugar until light and fluffy. Mix in vanilla and egg yolk until well blended. Then, on low speed, incorporate flour, hazelnuts, cinnamon, cloves, and salt until combined.
  • Roll dough into 1-inch balls and arrange them 2 inches apart on ungreased cookie sheets.
  • After baking for 10 minutes, gently press a well into the center of each cookie using the end of a wooden spoon handle. Fill each well with 1/2 teaspoon of preserves. Bake for approximately 10 more minutes, or until the edges are light golden. Let them cool for 2 minutes before transferring from the cookie sheets to cooling racks.
