Spiced hot chocolate sticks recipe

Create delicious spiced hot chocolate sticks for festive office gifts.
Ingredients:
  • 200g dark chocolate buttons
  • 2.50 gm ground ginger
  • 5.00 gm ground cinnamon
  • Mini marshmallows, to decorate
  • Warm milk, to serve
  • 75g butter, chopped
  • 55g brown sugar
  • 60ml golden syrup
  • 150g plain flour
  • 35g self-raising flour
  • 5.00 gm ground ginger
  • 1/4 tsp ground cloves
  • 1.25 gm ground nutmeg
  • 1.25 gm bicarbonate of soda
  • 1 Free Range Egg yolk
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray by lining it with baking paper.
  • In a medium saucepan over low heat, gently melt together the butter, sugar, and golden syrup, stirring continuously for about 5 minutes until the mixture is smooth. Transfer the mixture to a bowl and allow it to cool.
  • Combine the flour, ginger, cinnamon, cloves, nutmeg, bicarbonate of soda, and egg yolk in a bowl and mix well. Transfer the mixture onto a lightly floured surface and knead gently until smooth. Roll out the dough into a 3mm-thick disc. Cut out shapes using a 2cm gingerbread man cutter, then place them on a lined baking tray. Bake for 10 minutes or until lightly golden. Let the gingerbread men cool on the trays.
  • Prepare a silicone muffin tray or ice cube tray by greasing 12 of the holes. Melt dark chocolate in a heatproof bowl over simmering water, stirring for 5 minutes until smooth. Mix in ginger and cinnamon. Evenly distribute the melted chocolate among the prepared holes. Place gingerbread men and marshmallows on top of the chocolate and insert a popsicle stick. Let it set for 30 minutes before removing from the tray.
  • Serve by gently swirling chocolate sticks in warm milk.
