Elevate your culinary skills with a nutritious lamb, pumpkin, and spinach pizza - a simple and delicious dish to indulge in.
Ingredients:
  • 600g butternut pumpkin, peeled, cut into 2cm pieces
  • 18.20 gm olive oil
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2.50 gm smoked paprika
  • 2 garlic cloves, crushed
  • 500g lamb backstrap
  • 440g packet wholemeal pizza bases
  • 375.00 ml grated pizza plus cheese, with feta cheese
  • 1 large red onion, cut into thin wedges
  • 40.00 ml pine nuts
  • 50g baby spinach
  • Tamar Valley Greek Style Yoghurt, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Place pumpkin on a baking tray, drizzle with half of the oil, toss to coat, and season with pepper. Roast for 45 minutes, turning occasionally, until just tender.
  • In a bowl, mix cumin, coriander, paprika, garlic, and the remaining oil. Add lamb and toss until coated.
  • Preheat a chargrill pan over medium-high heat until sizzling. Sear the lamb for 3 to 4 minutes for a perfectly medium cook, until beautifully browned and cooked through. Place the lamb on a plate, cover, and let it rest for 5 minutes to lock in the juices. Slice the lamb thinly before serving.
  • - Line 2 baking trays with pizza bases. Add 2 tablespoons of cheese on each base. Layer with onion, pumpkin, and pine nuts. Bake for 5 to 8 minutes. - Add lamb and the rest of the cheese on top. Bake for 10 to 15 minutes until the cheese is melted and golden. - Garnish with spinach, a dollop of yogurt, and season with pepper before serving.
