Spiced lamb steaks with roasted vegetables, lentils and lime

Savory lamb steak served with flavorful veggies and lentils creates a delicious and easy weeknight dinner.
Ingredients:
  • 165g lentils
  • 5.00 gm smoked paprika
  • 20.00 ml cumin seeds
  • 1 large carrot, peeled, cut into 1cm-thick batons
  • 1 large parsnip, peeled, cut into 1cm-thick batons
  • 6 (about 250g) shallots, peeled, halved
  • 4 (about 600g) lamb leg steaks
  • 2 limes
  • 62.50 ml coarsely chopped coriander
  • Watercress sprigs, to serve
Instructions:
  • Preheat oven to 200°C. Simmer lentils in boiling water for 10 minutes until tender. Drain thoroughly.
  • Mix together paprika, cumin, and half of the oil in a small bowl. Line an oven tray with baking paper and spread out carrot, parsnip, and shallots on it. Drizzle the vegetables with half of the spice mixture and mix thoroughly. Season with salt and pepper. Bake in a preheated oven for 20-25 minutes until the vegetables are tender.
  • Massage the remaining spice mixture onto the lamb and let it marinate to enhance the flavors. Zest one lime using a zester alternatively use a vegetable peeler, removing the rind and cutting it into very thin strips. Juice both limes and combine the zest, 2 tablespoons of lime juice, and remaining oil in a measuring jug. Season with salt and pepper.
  • Preheat a char-grill pan or greased barbecue on high heat. Season lamb with salt and pepper, then grill for 3 minutes on each side for a medium cook or until done to your preference. Let it rest for 5 minutes before serving.
  • In a medium bowl, combine lentils with roasted vegetables. Add lime dressing and coriander; gently mix. Divide mixture among serving plates, top with lamb, and garnish with watercress sprigs before serving.
