Spiced lemonade

Ingredients:
  • 8 lemons
  • 2L (8 cups) cold water
  • 220g (1 cup) caster sugar
  • 1 vanilla bean, split
  • 1/4 tsp cardamom seeds
  • Crushed ice, to serve
Instructions:
  • Halve the lemons and juice half of them. Save the remaining lemons for later by placing them in a jug.
  • In a saucepan, gently blend lemon juice, water, sugar, vanilla bean, and cardamom seeds over low heat until the sugar completely dissolves. Take off the heat.
  • Drizzle the water mixture over the lemon halves in the jug, then cover and refrigerate for 2 hours to chill.
  • Place crushed ice in elegant serving glasses and gracefully pour the spiced lemonade over the top.
