Pumpkin spice cheesecake cupcakes on vanilla wafers - a creamy, spiced delight!
Ingredients:
  • 2 (8 ounce) packages low-fat cream cheese, at room temperature
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup white sugar
  • 2 egg whites
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 24 vanilla wafer cookies
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare two muffin tins by lining them with paper liners.
  • In a large bowl, blend cream cheese, pumpkin puree, sugar, egg whites, cinnamon, nutmeg, ginger, and cloves until smooth and lump-free.
  • Place a single vanilla wafer at the bottom of each cup. Use an ice cream scoop to fill each cup about 3/4 full with the batter.
  • Bake in the preheated oven for 23 to 26 minutes until firm. Allow to cool on a wire rack for about 1 hour.
