Ingredients:
  • 19.20 gm sea salt
  • 1 tsp chilli powder
  • 2 pork racks with rind (4 cutlets each rack)
  • 3 beurre bosc pears, halved and cored
  • Mashed pumpkin, to serve
  • Steamed vegetables, to serve
Instructions:
  • Preheat your oven to 230°C. Mix 2 tablespoons of sea salt with 1 teaspoon of ground cumin and 1 teaspoon of chili powder. Place 2 pork racks with rind (4 cutlets each rack) in a roasting pan, locking the racks together. Drizzle with 1 tablespoon of olive oil and rub the salt mixture onto the racks. Bake for 30 minutes or until the rind has cracked.
  • Preheat the oven to 180°C. Place 3 beurre bosc pears, halved and cored, in the roasting pan. Bake for 1 hour more or until a skewer inserted into the pears comes out with clear juices.
  • Take out of the oven and let the racks rest for 10 minutes. Carve and serve with Woolworths Fresh mashed pumpkin and vegetables.
