Spiced rhubarb relish

Tangy rhubarb relish enhances cheese boards and meat dishes with its versatile tangy flavor.
Ingredients:
  • 13.80 gm olive oil
  • 4 French shallots, thinly sliced
  • 100g (1/2 cup, firmly packed) brown sugar
  • 60ml (1/4 cup) red wine vinegar
  • 40.00 ml port
  • 1 cinnamon stick
  • 1 whole star anise
  • 1 dried bay leaf
  • 5 whole cloves
  • 2 strips orange rind
  • 1/2 tsp black peppercorns
  • 6 rhubarb stems, trimmed, cut into 2cm lengths
  • Chargrilled bread, to serve
  • Soft cheese, to serve
Instructions:
  • In a saucepan over low heat, gently cook shallot in oil for 4 minutes until soft. Add sugar, vinegar, port, cinnamon, star anise, bay leaf, cloves, orange rind, and peppercorns. Cook for 1-2 minutes until sugar dissolves.
  • Bring the mixture to a boil and simmer for 12 minutes. Add the rhubarb and simmer for an additional 5-6 minutes until it is just tender. Allow to cool for 10 minutes, then transfer to a sterilised jar or airtight container. Refrigerate overnight to enhance the flavors. Before serving, let it sit at room temperature for 1 hour. Enjoy with bread and cheese.
