Create a zesty spice rub for delicious spicy snapper.
Ingredients:
  • 20.00 ml ground allspice
  • 20.00 ml dried thyme
  • 20.00 ml garlic powder
  • 1 tsp chilli flakes
  • 42.00 gm lime juice
  • 36.40 gm olive oil
  • 4 Australian saddletail snapper fillets
  • 120g watercress, sprigs picked
  • 1 bunch radishes, thinly sliced
  • 1 spring onion, thinly sliced
  • 82.50 ml mint leaves
  • 1 avocado, stoned, peeled, thinly sliced
  • 21.00 gm lime juice, extra
  • 36.40 gm olive oil, extra
  • 1 garlic clove, crushed
  • 20.00 ml sunflower seeds
  • Lime cheeks, to serve
Instructions:
  • Mix the allspice, thyme, garlic powder, chili flakes, lime juice, and oil in a small bowl. Spread the mixture over the fish.
  • Preheat a large non-stick frying pan over medium-high heat. Sear the fish in 2 batches for 3 minutes on each side, or until it flakes easily with a fork. Rest on a plate, covered with foil, for 5 minutes before serving.
  • In a large bowl, mix together watercress, radish, spring onion, mint, and avocado. In a separate bowl, whisk extra lime juice, extra oil, and crushed garlic. Drizzle the dressing over the watercress mixture and gently toss to combine. Season to taste.
  • Plate the fish and salad individually. Top them with sunflower seeds for a delightful crunch, and accompany with lime cheeks for a burst of freshness before serving.
