Spicy African Yam Soup

Spicy and flavorful soup made quickly with simple ingredients.
Ingredients:
  • 1 teaspoon vegetable oil
  • 1 small onion, chopped
  • 1 large sweet potato, peeled and diced
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground cumin
  • 1 cup chunky salsa
  • 1 (15.5 ounce) can garbanzo beans, drained
  • 1 cup diced zucchini
  • 0.5 cup cooked rice
  • 2 tablespoons creamy peanut butter
Instructions:
  • In a stockpot over medium heat, sauté onion, sweet potato, and garlic in oil until the onion is soft. Adjust heat as needed to avoid burning.
  • Combine chicken broth, thyme, and cumin in the pot and bring to a boil. Cover and simmer for 15 minutes. Add salsa, garbanzo beans, and zucchini, and continue to simmer until tender, about 15 minutes.
  • Mix the cooked rice and peanut butter until the peanut butter is fully incorporated. Serve the delicious dish hot alongside tasty pita chips and a refreshing green salad.
