Garlicky asparagus with Kalamata olives and a kick of red pepper flakes make a tantalizing and effortless side dish.
Ingredients:
  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • 0.5 tablespoon minced garlic
  • 0.5 teaspoon crushed red pepper flakes, or to taste
  • 6 medium Kalamata olives, sliced
  • salt and freshly ground black pepper to taste
  • 0.5 medium lemon, cut into wedges
Instructions:
  • 1. Boil a generous amount of water in a large pot. Add the asparagus and blanch until it turns vibrant green, approximately 1 minute. Remove the asparagus and place it in an ice bath to halt the cooking. Drain and set aside the asparagus once cooled.
  • In a large skillet over medium heat, warm olive oil. Saute garlic, stirring constantly, until fragrant for about 30 seconds. Sprinkle with pepper flakes, add asparagus, and coat with the seasoned oil. Cook until asparagus is crisp-tender, not mushy, for 1 to 2 minutes.
  • Mix in the olives and generously season with salt and pepper to enhance the flavors. Plate the dish with lemon wedges for a tangy finish.
