Quick, flavorful, and nutrient-packed midweek meal option with minimal prep time.
Ingredients:
  • 700g beef fillet, sliced diagonally into 1.5cm pieces
  • 36.40 gm peanut oil
  • 2 garlic cloves, finely chopped
  • 3 tsp finely chopped fresh ginger
  • 1/2 tsp dried chilli flakes
  • 20.00 ml shaoxing wine
  • 120g baby kale leaves
  • Steamed rice, to serve
  • 5.00 gm cornflour
  • 5.00 gm caster sugar
  • 1.20 gm salt
  • 20.00 gm water
  • 15.90 gm light soy sauce
  • 2 tsp shaoxing wine
  • 5.30 gm dark soy sauce
Instructions:
  • In a glass or ceramic bowl, mix all marinade ingredients. Add beef and coat well. Cover and let sit at room temperature for 30 minutes.
  • Take out the beef from the marinade and keep the marinade aside. Heat a wok over high heat and add oil. Once the oil is smoking, cook half of the beef for 2 minutes until browned but pink inside. Transfer to a plate and repeat with the rest of the beef.
  • Lower the heat to medium-low and sauté the garlic, ginger, and chili for 1 minute until fragrant. Introduce the beef, shaoxing, and the marinade you set aside. Stir-fry for 1-2 minutes until the beef is fully cooked. Toss in the kale and continue to stir-fry for 30 seconds until it begins to wilt. Plate with steamed rice to serve.
