Spicy beef salad with mint, coriander & peanuts

Quick and vibrant spicy beef salad bursting with fresh flavors.
Ingredients:
  • Peanut oil or vegetable oil
  • 500g beef topside or round steak schnitzel (minute steak)
  • 1 medium red onion, peeled, cut into thin wedges
  • 2 small Lebanese cucumbers, halved, sliced
  • 3 radishes, trimmed, thinly sliced
  • 44.00 gm Thai sweet chilli sauce
  • 42.00 gm fresh lemon juice
  • 125.00 ml roughly chopped fresh coriander leaves
  • 62.50 ml roughly chopped fresh mint leaves
  • 35g (1/4 cup) unsalted roasted peanuts, roughly chopped
  • 1 small Iceberg lettuce, leaves washed, dried, to serve
Instructions:
  • Prepare the grill or pan with a light coating of vegetable or peanut oil. Heat on high. Sear steaks for just 30-60 seconds per side, or until desired doneness. Cook in batches if needed.
  • Slice steak into 1cm thick pieces and toss together with onion, cucumbers, and radishes in a large bowl. Shake together sweet chili sauce, 1 tablespoon of peanut or vegetable oil, and lemon juice in a screw-top jar until well mixed.
  • Drizzle salad with dressing, sprinkle with coriander, mint, and peanuts, then mix together. Serve on a bed of fresh lettuce leaves.
