Spicy beef salad with quick microwave rice and cool yogurt sauce.
Ingredients:
  • Pinch of ground cinnamon
  • 400g lean beef mince
  • 2 garlic cloves, crushed
  • 28.60 gm honey
  • 2 tsp harissa
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 200g Greek-style yoghurt
  • 1 tsp finely grated lemon rind
  • 21.00 gm fresh lemon juice
  • 2 x 250g pkt microwave brown, red and wild rice
  • 1 avocado, chopped
  • 60g baby rocket
  • 50g Greek feta, crumbled
  • 1 long fresh red chilli, thinly sliced
  • 82.50 ml small fresh mint leaves
  • 82.50 ml pomegranate arils
  • Lemon wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat the oil. Add the beef and cook for 6-8 minutes, breaking up any lumps with a wooden spoon until browned. Stir in garlic, honey, harissa, cumin, coriander, and cinnamon. Cook for 1-2 minutes until fragrant and the beef starts to crisp up. Transfer to a large bowl.
  • In a small bowl, mix together the yogurt, lemon zest, and lemon juice. Season with salt and pepper. Cook the rice according to package instructions, then arrange it on a serving platter.
  • Combine the avocado, rocket, feta, half of the chilli, and half of the mint with the beef mixture. Season well. Mix everything together and spoon the mixture over the rice. Sprinkle with the pomegranate arils, and the rest of the chilli and mint. Serve alongside lemon wedges and a side of yogurt sauce.
