Try crispy baked celeriac sticks with spicy homemade harissa ketchup - perfect as a side or snack!
Ingredients:
  • 0.5 celeriac, peeled and cut into 1/2-inch sticks
  • 0.25 cup tomato paste
  • 2 tablespoons tomato sauce
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons harissa
  • 2 teaspoons brown rice syrup
  • 0.25 teaspoon ground coriander
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon onion powder
  • 1 pinch fine sea salt
  • 1 teaspoon water
Instructions:
  • Preheat the oven to 225 degrees F (99 degrees C) and place a large baking sheet lined with aluminum foil in the oven to warm up.
  • In a bowl, combine celeriac with a drizzle of olive oil, salt, and black pepper. Toss to coat evenly.
  • Carefully take the hot baking sheet out of the oven. Arrange the fries in a single layer with ample space in between on the baking sheet.
  • Place the dish in the hot oven and let it bake for 20 minutes.
  • As the fries are baking, mix together tomato paste, tomato sauce, apple cider vinegar, harissa, brown rice syrup, coriander, garlic powder, onion powder, and sea salt in a small bowl until smooth. Thin out the mixture by adding water, 1/4 teaspoon at a time, until it reaches your preferred consistency. Set the ketchup aside.
  • Take the golden fries out of the oven and crank up the heat to 450 degrees F (230 degrees C). Give the fries a nice flip and slide the baking sheet back into the oven. Bake until perfectly crispy, approximately 15 minutes.
  • Present the celery root fries alongside a side of zesty harissa ketchup for dipping.
