Delicious acorn squash stuffed with apples, celery, and onion- a must-have for Thanksgiving or pairing with pork in the fall.
Ingredients:
  • 1 acorn squash, halved and seeded
  • 1 apple, diced
  • 2 tablespoons diced celery
  • 2 tablespoons water
  • 2 teaspoons minced onion
  • 2 teaspoons butter, cubed
  • 1 teaspoon maple syrup
  • 1 pinch ground cinnamon, or to taste
Instructions:
  • Preheat your oven to a toasty 400°F (200°C) and give your baking sheet a kiss of olive oil.
  • Arrange the squash halves, cut-side down, on a baking sheet.
  • In a small baking dish, mix together apple, celery, water, onion, and butter, then cover with aluminum foil.
  • Roast squash and apple blend in the oven until tender, for approximately 45 minutes. Fill squash halves with apple mixture, then drizzle with maple syrup and sprinkle with cinnamon.
