Kid-approved baked acorn squash with buttery orange and nutmeg flavors.
Ingredients:
  • 2 acorn squash, halved and seeded
  • 0.25 cup frozen orange juice concentrate, thawed
  • 2 tablespoons butter
  • 4 teaspoons brown sugar
  • 1 teaspoon ground nutmeg
  • 0.125 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • Add a 1/2 inch of water to a baking dish. Arrange the squash halves cut side down in the dish and bake for 40 minutes in the preheated oven.
  • Combine the thawed orange juice, butter, brown sugar, nutmeg, and cinnamon in a bowl, whisking until well mixed.
  • Arrange the squash halves cut side up in the baking dish, then generously drizzle them with the orange juice sauce before baking for another 20 minutes.
