Chilli orange baked chicken

Delicious orange-infused chicken with a hint of mild chili for extra excitement.
Ingredients:
  • 2 garlic cloves, crushed
  • 2 tsp finely grated orange rind
  • 131.25 gm orange juice
  • 20.00 ml Mexican chilli powder
  • 2 tsp dried oregano
  • 2.50 gm ground cumin
  • 1kg chicken thigh
  • 700g chicken drumstick
Instructions:
  • In a large bowl, mix together garlic, orange rind, orange juice, chili, oregano, and cumin. Add chicken pieces and toss to coat. Cover and refrigerate for 4 hours or overnight.
  • - Preheat the oven to 200°C/180°C fan-forced and line a roasting pan with baking paper. - Arrange the chicken pieces on a wire rack in the roasting pan and spoon over the remaining marinade. - Roast the chicken, turning occasionally, for 50 minutes or until the juices run clear when the thickest part is pierced with a skewer. - Let it stand, covered, for 10 minutes before serving.
