Orange, chilli and ginger pork spare ribs

Indulge in irresistible sticky orange, chili, and ginger pork spare ribs!
Ingredients:
  • 170g marmalade
  • 2 tsp finely grated ginger
  • 2 garlic cloves, crushed
  • 1/2 red chilli, seeded, finely chopped
  • 21.00 gm soy sauce
  • 1 orange, zested and juiced
  • 8 Pork spare ribs
  • 9.20 gm vegetable oil
  • 1 garlic clove, crushed, extra
  • 1 red capsicum, cut into matchsticks
  • 1 yellow capsicum, cut into matchsticks
  • 150g snowpeas, trimmed, cut into matchsticks
  • 2 spring onions, trimmed, cut into matchsticks
  • 15.90 gm soy sauce
  • Steamed jasmine rice, to serve
Instructions:
  • In a small bowl, mix marmalade, ginger, garlic, chili, soy sauce, orange zest, and 2 tbsp of juice. Put pork spare ribs in a large ceramic or glass dish. Pour marinade over ribs, ensuring they are well coated. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 200C. Line a baking dish with foil, saving the extra marinade. Arrange the ribs in a single layer on the rack. Bake for 40-45 mins, rotating every 10 mins and brushing with the reserved marinade.
  • Heat oil in a wok over medium heat. Stir in garlic, capsicum, snowpeas, and spring onions. Cook for 3 mins until vegetables are just tender. Pour soy sauce and cook for 2 more mins.
  • Enjoy the ribs alongside fragrant jasmine rice, a colorful vegetable stir-fry, and extra sauce on the side.
