Satisfy autumn cravings with tender baked acorn squash, filled with butter, brown sugar, and maple syrup.
Ingredients:
  • 1 Acorn squash
  • 1 Tbsp Butter
  • 2 Tbsp Brown Sugar
  • 2 teaspoons Maple Syrup
  • Dash of Salt
Instructions:
  • Preheat your oven to a toasty 400°F.
  • Prepare the squash: Microwave for 1 minute to soften. Place on a stable cutting board and carefully halve it lengthwise. Scoop out seeds and strings. Score the flesh in a cross-hatch pattern. Arrange cut side up in a roasting pan and add 1/4 inch of water to the pan.
  • Prepare the halves by rubbing 1/2 tablespoon of butter inside each half. If using unsalted butter, sprinkle a touch of salt. Crumble 1 tablespoon of brown sugar into each half, then drizzle with 1 teaspoon of maple syrup.
  • Achieve perfect caramelization by baking the squash halves at 400°F for 1 to 1 1/4 hours until tops are nicely browned and flesh is irresistibly tender. Remember, squash only improves with more time in the oven. Be sure not to undercook.
  • Take the roasted squash halves out of the oven. Drizzle any remaining buttery sugar sauce over them. Allow to cool briefly before serving. Enjoy the dish and don't forget to leave a review below!
