Stuffed acorn squash halves baked with butter, brown sugar, savory spices, and Parmesan cheese for a flavorful dish.
Ingredients:
  • 1 acorn squash, halved and seeded
  • 4 tablespoons butter, divided
  • 4 tablespoons brown sugar, divided
  • 2 cups dry bread stuffing mix, divided
  • 1.5 cups chicken broth, divided
  • salt and pepper to taste
  • garlic powder to taste
  • onion powder to taste
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Lay the squash halves, cut side up, in a shallow baking dish. Fill each half with 2 tablespoons of butter, 2 tablespoons of brown sugar, 1 cup of stuffing mix, 3/4 cup of chicken broth, and season with salt, pepper, garlic powder, and onion powder. Wrap each half securely with aluminum foil.
  • Roast in a hot oven for 60 minutes or until the squash is fork-tender.
