Delicious autumn side dish: Baked acorn squash with garlic butter.
Ingredients:
  • cooking spray
  • 2 acorn squash, halved and seeded
  • 0.25 cup butter, divided
  • 4 teaspoons minced garlic, divided
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then generously coat a 9x13-inch baking dish with cooking spray.
  • Arrange the squash halves in the baking dish with the cut side facing down.
  • After baking the squash, generously fill each one with a tablespoon of butter and a teaspoon of garlic. Sprinkle with salt and pepper.
  • Bake squash cut-side up until tender, approximately 20 minutes. Allow to cool for 5 minutes before serving.
