Savory vegetarian hot dogs baked with celery, onion, Cheddar, and cornbread mix spiced with sage and black pepper.
Ingredients:
  • 2 cups thinly sliced celery
  • 1.5 cups sliced green onion
  • 1.5 pounds vegetarian hot dogs
  • 2 eggs, beaten
  • 1.5 cups milk
  • 2 teaspoons rubbed sage
  • 0.25 teaspoon ground black pepper
  • 2 (8.5 ounce) packages dry corn bread mix
  • 2 cups shredded Cheddar cheese, divided
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously grease a shallow 3 quart baking dish.
  • In a large skillet over medium heat, melt butter and sauté celery for 5 minutes. Add green onions and sauté for another 5 minutes. Transfer to a large bowl and set aside.
  • Cut each hot dog lengthwise into quarters and then cut each quarter into thirds. Saute them in the skillet for 5 minutes until lightly browned. Combine hot dogs with celery and onions, reserving 1 cup of the mixture.
  • Combine eggs, milk, sage, pepper, and corn bread mix in a bowl. Mix well, then fold into the hot dog mixture. Add 1 1/2 cups cheese and transfer to a baking dish. Sprinkle remaining hot dog mixture and 1/2 cup cheese on top before baking.
  • Bake in a hot oven without covering for 30 minutes until beautifully golden.
