Spicy black-eyed pea soup with jalapenos, bacon, tomatoes, and melted Swiss cheese.
Ingredients:
  • 5 slices bacon
  • 2 cups chopped tomato
  • 1 cup chopped onion
  • 2 tablespoons chopped jalapeno pepper
  • 1 clove garlic, minced
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 3 cups water
  • 2 cubes beef bouillon
  • 4 (15 ounce) cans black-eyed peas, rinsed and drained
  • 2 cups grated Swiss cheese
Instructions:
  • Fry bacon in a large skillet over medium-high heat, turning occasionally, until crispy, for about 8 to 10 minutes. Remove to paper towels to drain and chop once cooled.
  • Combine tomatoes, onion, jalapenos, garlic, salt, and pepper with the flavorful bacon drippings and saute over medium-high heat until the vegetables are tender, approximately 5 minutes.
  • Pour water and bouillon into the pot, stirring until the bouillon cubes dissolve. Add peas and cook for about 5 minutes until heated through. Stir in Swiss cheese and simmer gently until melted, for 3 to 5 minutes.
