Celebrate the colorful allure of capsicums in this vibrant salad.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, halved, thinly sliced
  • 40.00 ml chopped hot salami
  • 1 large red capsicum, halved, deseeded, cut into 1cm-thick strips
  • 1 large yellow capsicum, halved, deseeded, cut into 1cm-thick strips
  • 1 large green capsicum, halved, deseeded, cut into 1cm-thick strips
  • 2 large ripe tomatoes, coarsely chopped
  • 60ml (1/4 cup) white wine
  • 20.00 ml chopped fresh oregano
  • 5.00 gm caster sugar
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • In a large frying pan over low heat, gently heat oil. Add onion, cover, and cook for 8 minutes until soft, stirring occasionally.
  • Next, introduce the salami into the pan and sauté for 2 minutes. Then, incorporate the mixed capsicum, turn up the heat to high, and stir occasionally while cooking for 4 minutes until the mixture starts to soften.
  • Combine the tomato, wine, oregano, and sugar in a pot and bring to a boil. Reduce heat and simmer covered for 8 minutes. Season with salt and pepper, then stir in the parsley before serving.
