Make quick and delicious pork ribs with just six ingredients and a can of soup!
Ingredients:
  • 800g pork rib
  • 18.20 gm olive oil
  • 2 red capsicums, thickly sliced
  • 5.00 gm smoked paprika
  • 420g can condensed spicy tomato soup
  • 255.00 gm chicken style liquid stock
  • 250.00 ml baby spinach
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Cut the racks of ribs in half. Heat oil in a large frying pan over medium-high heat and brown the ribs in batches for 2 minutes per side. Transfer the browned ribs to a large roasting pan.
  • Add the capsicum to the pan and sauté for 3 minutes until slightly softened. Mix in paprika, soup, and stock. Bring to a boil. Pour the tomato mixture over the ribs, ensuring they are fully coated. Cover with foil.
  • After baking for 1 hour, uncover and bake for an additional 30 minutes. Then, use kitchen scissors or a knife to cut the racks into individual ribs. Finally, serve the ribs with the tomato mixture and baby spinach.
