Light and tasty personal pizza for guilt-free enjoyment.
Ingredients:
  • 9.20 gm olive oil
  • 350g chicken breast mince
  • 3.75 gm Middle Eastern spice blend (see note)
  • 3 green onions, sliced
  • 1 red capsicum, deseeded, sliced
  • 125g cherry tomatoes, halved
  • 2 x 225g pkts 97% fat-free pizza bases
  • 70.63 gm barbecue sauce
  • 62.50 ml coriander leaves
  • lemon wedges, to serve
Instructions:
  • In a non-stick frying pan over medium-high heat, heat oil. Add mince and garlic, cook while breaking up with a wooden spoon until light golden, about 2 minutes. Stir in spice blend, green onions, and capsicum, cook briefly for 1 minute. Remove from heat, then add tomatoes. Season with salt and pepper.
  • Preheat your oven to 220°C. Place pizza bases on 2 baking trays, generously spread with barbecue sauce, add chicken mixture, and bake for 10 to 12 minutes. Remember to swap trays midway through baking for an evenly crispy base. Finish off with fresh coriander and serve with a squeeze of lemon for a delicious touch.
