Spicy chickpea and nut mix

"Delight guests with a flavorful bowl of spicy chickpeas and nuts to kick off your party or game night!"
Ingredients:
  • 400g can chickpeas, drained, rinsed
  • 7.50 gm Cajun seasoning
  • 4.80 gm sea salt
  • 21.60 gm honey
  • 18.20 gm extra virgin olive oil
  • 5.00 gm smoked paprika
  • 2.50 gm curry powder
  • 1/2 tsp chilli powder
  • 250.00 ml almond kernels
  • 250.00 ml raw cashew nuts
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and prepare 2 baking trays with baking paper.
  • Spread chickpeas on a prepared tray and generously sprinkle with flavorful Cajun seasoning and a hint of salt. Gently toss to ensure every chickpea is coated. Bake, turning occasionally, until beautifully golden for 50 to 55 minutes. Let cool on the tray to preserve their crispiness.
  • In a small frying pan over low heat, mix together honey, oil, paprika, curry, and chili powders along with the remaining salt until the honey is melted and everything is well combined. Pour the mixture into a bowl, then add almonds and cashews, stirring until they are thoroughly coated.
  • Spread the nut mixture on the remaining prepared tray and bake for 15 to 20 minutes, stirring occasionally until golden. Once baked, allow it to cool on the tray before tossing the nuts with chickpeas. Serve and enjoy!
