Spicy guacamole with corn and jalapeños is a quick and crowd-pleasing party hit. Perfect for dipping with chips or topping off your favorite Mexican dishes for an extra kick of flavor. Ready in just 15 minutes!
Ingredients:
  • 1/2 cup frozen whole kernel corn, thawed
  • 2 ripe avocados, pitted, peeled and diced
  • 1/4 cup diced red onion
  • 1/4 cup from 1 jar (12 oz) Old El Paso™ Hot Jalapeño Slices, drained, diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons mayonnaise or salad dressing
  • 48 roasted veggie zesty cheddar tortilla chips
Instructions:
  • In an 8-inch nonstick skillet, sauté the corn over medium-high heat for 5 to 8 minutes, stirring occasionally, until lightly toasted.
  • In a medium bowl, mash the avocados with a fork and mix in all other ingredients except the tortilla chips. Add in the corn and serve with the tortilla chips.
