Spicy crab balls with oyster sauce

Ingredients:
  • 12 dried shiitake mushrooms (see Notes)
  • 2 small red chillies, seeded, finely chopped
  • 3 garlic cloves, crushed
  • 250g raw fresh crab meat
  • 300g minced pork
  • 1 egg white, lightly beaten
  • 18.40 gm vegetable oil
  • 2 onions, sliced
  • 2cm piece ginger, cut into thin strips
  • 1.25L (5 cups) fish stock
  • 48.80 gm oyster sauce, plus extra to serve
  • 300g egg noodles, cooked
  • 6 baby bok choy, halved, steamed
  • Coriander, to garnish
Instructions:
  • 1. Submerge mushrooms in boiling water for 10 minutes. Combine the remaining chili, garlic, crab, pork, and eggwhite in a bowl. Season generously, mix thoroughly, and shape into 18 balls. Refrigerate, covered, for 15 minutes before proceeding.
  • In a large pan, warm up the oil over low heat, then toss in the onion, remaining chili, garlic, and ginger.
  • Cook the mixture until softened, then pour in the stock and drained mushrooms. Let it simmer on medium heat for 5 minutes. Afterward, add the balls and continue to simmer for another 5 minutes. Finally, mix in the oyster sauce and cook for an additional 2 minutes.
  • Distribute noodles and bok choy evenly into bowls with mushrooms. Drizzle generously with extra oyster sauce and top with fresh coriander for extra flavor.
