Spicy Cucumber and Jalapeño Salad

Try this refreshing and spicy cucumber jalapeño salad for a perfect summer side dish.
Ingredients:
  • 8 Persian cucumbers, cut into 1/16-inch rounds (about 4 cups)
  • 4 small jalapeños, cut into 1/16-inch rounds (about 1 cup)
  • 1/2 cup roughly chopped cilantro
  • 1/4 cup rice vinegar
  • 3 tablespoons agave syrup, plus more to taste
  • 1 teaspoon sea salt, plus more to taste
Instructions:
  • Mix together in a medium bowl the cucumbers, jalapeños, cilantro, rice vinegar, agave, and salt, tossing gently to combine thoroughly.
  • Adjust seasoning to taste with agave and salt. Serve immediately. Store leftovers tightly covered in the fridge for up to 2 days. Cucumbers may lose crispiness but will remain delicious. Enjoy and don't forget to leave us a review!
