Balanced with sweet basil, this spicy eggplant stir-fry is quick, easy, and bursting with bold flavors.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 teaspoon crushed red pepper flakes
  • 1 large eggplant, cut into 1/2-inch cubes
  • 1 medium onion, coarsely chopped
  • 1 medium red bell pepper, seeded and coarsely chopped
  • 4 cloves garlic, finely chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 1 tablespoon packed brown sugar
  • 1 tablespoon cornstarch
  • 1 cup coarsely chopped fresh basil leaves
Instructions:
  • In a hot skillet or wok, sizzle oil and pepper flakes for 15 to 20 seconds. Add eggplant and cook until it starts to char, about 5 minutes. Stir in onion, bell pepper, and garlic; stir-fry for 3 minutes.
  • Coat vegetables with soy sauce, vinegar, brown sugar, and cornstarch mixture. Cook until sauce thickens, about 1 minute.
  • Take off the heat and mix in the basil until well combined.
