Spicy tomato soup with fresh tomatoes, red pepper flakes, and Parmesan cheese; versatile as both a soup and a rich tomato sauce when simmered longer.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 pounds assorted tomatoes, chopped
  • 0.5 cup Pinot Grigio wine
  • 0.25 cup chopped fresh basil leaves
  • 3 ounces tomato paste
  • 2 teaspoons white sugar
  • 1.5 teaspoons crushed red pepper flakes
  • 1 teaspoon dried oregano
  • 0.25 teaspoon ground black pepper
  • 0.5 cup grated Parmesan cheese
Instructions:
  • In a large stockpot, warm oil over medium heat. Sauté onion until soft, around 5 minutes. Stir in garlic, cooking until fragrant but not browned, about 2 minutes. Add tomatoes, wine, water, basil, tomato paste, sugar, red pepper flakes, oregano, salt, and pepper. Cover and simmer for 45 minutes, stirring occasionally. Enjoy!
  • Puree the soup until smooth using an immersion blender or in batches in a blender. Return the blended mixture to the heat, stir in Parmesan cheese, and cook for an additional 3 minutes. Serve hot.
