Spicy Harissa Chicken Kebabs cooked with vegetables in Reynolds Wrap® Foil packet for maximum flavor!
Ingredients:
  • 4 tablespoons mild harissa paste or sauce
  • 2 tablespoons honey
  • 0.5 lemon, juiced
  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 yellow squash, thickly sliced
  • 2 green zucchini, thickly sliced
  • 1 red onion, thickly sliced
  • 2 cups thickly sliced button mushrooms
  • 3 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 0.5 teaspoon salt and pepper
  • Reynolds Wrap® Aluminum Foil
Instructions:
  • Preheat your oven to 425°F.
  • Combine the spicy harissa, sweet honey, and tangy lemon juice in a bowl. Toss in the chicken and stir until well coated.
  • Thread the chicken evenly onto 8 wooden skewers and set aside.
  • Combine the squash, zucchini, onion, mushrooms, olive oil, cumin, salt, and pepper until well mixed.
  • Lay out a 1 1/2 to 2 feet long sheet of Reynolds Wrap® Aluminum Foil on a flat surface. Arrange 1/4 of the vegetables in the center of the foil and place 2 chicken skewers on top. Fold the edges of the foil to seal and create a neat foil packet.
  • Repeat this action thrice more and arrange the foil packets on a baking sheet.
  • Bake in a 425°F oven for 20 minutes. Open the foil packets and cook for an additional 15 minutes or until the chicken is lightly browned and fully cooked.
  • Serve the individual foil packets with warm pita for a delightful presentation.
