Spicy jalapeño and bacon mac and cheese, perfect for parties or potlucks.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 (16 ounce) package bacon, cut into bite-size pieces
  • 10 jalapeno peppers, seeded and diced
  • 2 tablespoons chile paste, or to taste
  • salt and ground black pepper to taste
  • 4 tablespoons all-purpose flour
  • 1 tablespoon minced garlic
  • 4 cups whole milk
  • 16 ounces shredded extra-sharp Cheddar cheese
  • 8 ounces shredded Parmesan cheese
Instructions:
  • In a generously salted pot of boiling water, cook elbow macaroni until al dente, about 8 minutes. Drain pasta.
  • In a large skillet, crispen bacon over medium-high heat, flipping occasionally, until almost crispy, for about 5 minutes. Add jalapeños and fry until tender and bacon is fully crispy, approximately 5 minutes. Drain excess bacon fat, retaining 4 tablespoons in the pan.
  • Combine chile paste in the pan and fry briefly. Season with salt and pepper, then mix in flour. Stir in garlic and cook briefly. Gradually pour in milk, whisking constantly over medium heat for 5 minutes. Remove from heat and rest for 10 minutes to cool slightly and prevent cheese from separating.
  • Melt Cheddar cheese and Parmesan cheese into the mixture until creamy. Combine with drained pasta and serve.
