Spicy chicken bites with sweet pineapple chutney - perfect for entertaining!
Ingredients:
  • 12 chicken wings
  • 57.20 gm honey
  • 5cm piece fresh ginger, peeled, finely grated
  • 4 garlic cloves, crushed
  • 20.00 ml ground allspice
  • 2 tsp ground black pepper
  • 1 1/2 tsp dried chilli flakes
  • 3 green onions, finely chopped, plus extra to serve
  • 82.50 ml fresh coriander leaves, finely chopped
  • 56.88 gm extra virgin olive oil
  • 1 small red onion, finely chopped
  • 107.50 gm caster sugar
  • 125.00 ml apple cider vinegar
  • 440g can crushed pineapple in juice (undrained)
  • 40.00 ml fresh coriander leaves, finely chopped
Instructions:
  • Prepare Pineapple Chutney: Combine red onion, sugar, vinegar, and 3/4 of the pineapple in a medium saucepan over medium heat. Cook, stirring, until sugar dissolves, then simmer on low for 20 minutes until thickened. Let cool in the pan, then mix in coriander and remaining pineapple. Set aside until ready to use.
  • - Preheat your oven to 200C/180C fan-forced while you line 2 large baking trays with baking paper.
  • Trim and discard wing tips from chicken wings, then halve each wing at the joint before placing them in a large bowl.
  • Mix together the honey, ginger, garlic, allspice, pepper, chili, onion, coriander, and oil until well combined. Pour over the wings, season with salt, and toss to coat evenly. Place wings on prepared trays in a single layer.
  • Bake for 30 minutes, turning halfway through, until fully cooked. Place on a serving platter.
  • Garnish wings with additional green onion and accompany with Pineapple Chutney for an irresistible presentation.
