Curry-spiced lamb loin with juicy tomatoes and wilted spinach.
Ingredients:
  • 300g lamb loin
  • 10.00 gm Curry Powder
  • 18.40 gm oil
  • 4 small tomatoes, quartered
  • 20 green beans, trimmed and halved
  • 100g spinach, washed
Instructions:
  • Drizzle lamb loin with oil, then generously coat with KEEN'S Curry Powder, making sure to press the seasoning into the meat for maximum flavor infusion.
  • Sear the lamb in a hot frying pan for 4 minutes on high heat. Lower the heat to medium and carefully flip the lamb.
  • Combine the tomatoes and beans in the pan and cook for 4 minutes before setting the lamb aside to keep warm.
  • Add the spinach, then gently mix it with the tomatoes and beans until the spinach wilts.
  • Arrange the vegetables on a plate and serve alongside thick slices of lamb.
