Grilled lamb marinated in North African spices served with couscous, a traditional semolina side dish.
Ingredients:
  • 1 1/2 pounds lamb leg
  • 1 medium onion, chopped (1/2 cup)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • 2 garlic cloves, finely chopped
  • 3 cups hot cooked couscous
  • Red pepper sauce, if desired
  • 1/4 cup chopped fresh mint leaves
Instructions:
  • Trim excess fat from the lamb. Cut the lamb into 1 1/2-inch cubes. Combine all ingredients except couscous, mint, and pepper sauce in a glass or plastic bowl. Add the lamb and mix well to coat with the marinade. Cover and refrigerate for 4 hours.
  • Preheat broiler. Grease broiler pan rack. Take lamb out of marinade and place on rack. Broil 5 inches from heat for 6 minutes, then flip. Drizzle drippings over lamb. Continue broiling for about 7 minutes until cooked through.
  • Combine fluffy couscous with fresh mint. Plate tender lamb over the fragrant couscous bed. Accompany with a flavorful pepper sauce.
