Spicy lamb rack with rocket couscous, a perfect weeknight dinner.
Ingredients:
  • 375ml milk
  • 375ml chicken stock
  • 2 tsp garlic blend
  • 2 shallots, trimmed, finely chopped
  • 1 tsp chilli powder
  • 2.50 gm ground cumin
  • Olive oil spray
  • 1x 8-cutlet lamb rack
  • 500g sweet potato, peeled, halved lengthways, cut into 1cm thick slices
  • Freshly ground pepper
  • 380g couscous
  • 80g pkt baby rocket leaves
Instructions:
  • Preheat the oven to 180°C and line a baking tray with non-stick baking paper. Mix together the garlic blend, shallots, chilli, and half of the cumin for a flavorful blend.
  • Drizzle the lamb with oil and generously coat with the spice mixture, then place on the tray. Arrange the sweet potatoes on the tray, drizzle with more oil, and sprinkle with pepper. Bake for 30-35 minutes until perfectly cooked.
  • In a heatproof bowl, place the couscous. In a saucepan, bring the stock and milk to a boil. Remove from heat, add the remaining cumin, and season generously with pepper. Pour over the couscous, cover, and let sit for 5 minutes. Fluff the couscous with a fork, then gently fold in the rocket.
  • Divide the rack into 4 portions and beautifully plate with the couscous and sweet potato.
