Spicy lentil and black bean nachos topped with salsa and melted cheese - a satisfying and affordable vegetarian snack for any occasion.
Ingredients:
  • 1 teaspoon coconut oil
  • 1 cup finely chopped onion
  • 1 cup dried lentils
  • 2.5 cups chicken broth
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup shredded Monterey Jack cheese
  • 1 (13.5 ounce) package tortilla chips
Instructions:
  • In a skillet over medium heat, warm up the coconut oil. Add the onion and sauté until tender for approximately 5 minutes, stirring occasionally. Now, mix in the garlic and cook for an additional minute.
  • Combine lentils, broth, chili powder, cumin, and oregano in a pot. Bring to a boil, then simmer on low for 30 minutes until the lentils are tender. Season with salt and pepper to taste.
  • In a saucepan, mix black beans and corn together. If using canned beans and corn, make sure to drain them first. Heat over medium heat, stirring occasionally, until warmed through, about 8 minutes.
  • Arrange tortilla chips elegantly on a platter. Layer on top with lentils, black beans, corn, and salsa. Sprinkle generously with shredded cheese. Serve promptly while warm.
