Flavorful vegetable lentil soup with tomato and spice.
Ingredients:
  • 1 tablespoon olive oil
  • 0.25 cup chopped onion
  • 4 cloves garlic, chopped
  • 1 large carrot, chopped
  • 1 large stalk celery, chopped
  • 2 tablespoons tomato paste
  • 0.125 teaspoon crushed red pepper flakes, or more to taste
  • 0.125 teaspoon cayenne pepper, or more to taste
  • salt and ground black pepper to taste
  • 6 cups chicken stock
  • 1.5 cups dry lentils
Instructions:
  • In a large saucepan over medium heat, sauté onions and garlic in olive oil until the onions are translucent, approximately 5 minutes.
  • Add the carrots and celery to the mixture, stirring occasionally, and cook until the vegetables are tender, approximately 8 minutes.
  • Blend in the savory tomato paste, zesty crushed red pepper, spicy cayenne pepper, and a pinch of salt and black pepper. Incorporate the rich chicken stock and hearty lentils.
  • Bring the soup to a lively boil, then lower the heat and let it gently simmer until the lentils are tender, for about 20 minutes.
