Spicy Tomato and Lentil Soup

Satisfying lentil soup with crusty bread - quick, easy, delicious.
Ingredients:
  • 1 onion, finely chopped
  • 1 chile pepper, chopped
  • 1 cup red lentils
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 1 cup water
  • salt and pepper to taste
  • 1 teaspoon dried basil
  • 0.25 cup sour cream, for topping
  • 2 sprigs fresh basil leaves for garnish
Instructions:
  • In a large saucepan or Dutch oven, warm the olive oil. Sauté the onions until lightly browned. Stir in the tomatoes, chili pepper, lentils, cumin, basil, and water. Bring to a boil, then simmer on medium-low heat for around 20 minutes until lentils are tender.
  • After the lentils have softened, blend the soup using a stick blender. Season with salt and pepper to taste. To enhance presentation, use a squirt bottle to drizzle sour cream in a spiral on each bowl of soup and top with a fresh basil sprig.
