Warm up this winter with easy Spicy Lentil Soup - perfect for cozy nights!
Ingredients:
  • 1 large brown onion, chopped
  • 500g sebago potatoes, peeled, chopped
  • 2 medium carrots, peeled, chopped
  • 2 celery stalks, trimmed, chopped
  • 2 medium tomatoes, chopped
  • 28.00 gm madras curry paste
  • 1 litre chicken stock
  • 125.00 ml red lentils, rinsed
  • Coriander leaves, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Saute onion and garlic for 3 minutes until onion softens. Stir in carrot, celery, tomato, and potato. Mix in curry paste and cook for 5 more minutes, stirring consistently.
  • Pour in the flavorful stock and sprinkle with pepper. Cover the pot and bring to a boil. Lower the heat to medium-low and gently simmer for 5 minutes. Stir in the lentils and continue simmering for 15 to 20 minutes until the potato is tender. Allow it to rest for 5 minutes before serving.
  • Puree in batches until velvety. Garnish with fresh cilantro before serving.
