Transform basic mac and cheese into a quick and delicious soup with pantry staples.
Ingredients:
  • 2 (7.25 ounce) packages macaroni and cheese mix
  • 0.25 cup butter
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
  • 1 tablespoon garlic powder
  • 1 teaspoon dry mustard powder
  • 0.5 teaspoon ground black pepper, or to taste
  • 1.5 cups milk
  • 0.75 cup sour cream, divided
Instructions:
  • 1. Begin by bringing a generously salted large pot of water to a boil. Add the macaroni from the packages, setting aside the cheese mix packets for later use. Cook the macaroni in the boiling water over medium heat, stirring occasionally, until just tender with a slight bite, which takes around 8 to 10 minutes. Drain the cooked macaroni and give it a quick rinse under cold water before returning it to the pot.
  • Combine butter, chicken broth, and tomatoes in a pot with macaroni and simmer over medium heat. Add garlic powder, cumin, dry mustard, pepper, and cheese mix packets. Pour in milk and simmer gently over low heat until almost at a simmer. Avoid boiling.
  • Ladle the soup into bowls and generously dollop each serving with 2 tablespoons of sour cream.
