Delicious vegetarian meatballs made with rice, oats, bread crumbs, and Parmesan can be enjoyed in pasta or as a flavorful hoagie sandwich with tomato sauce and cheese.
Ingredients:
  • 1 cup rolled oats
  • 4 cups cooked rice
  • 0.66666668653488 cup milk
  • 2 medium onions, diced
  • 0.66666668653488 cup dry bread crumbs
  • 0.5 cup shredded Parmesan cheese
  • 0.25 cup cornmeal
  • 4 large eggs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons dried oregano
  • 2 tablespoons garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon cayenne pepper
  • 1 cup oil for frying, or as needed
Instructions:
  • Process oats in a food processor to a fine texture. Blend in cooked rice and milk until smooth. Add onions, bread crumbs, Parmesan cheese, cornmeal, eggs, flour, oregano, garlic powder, salt, and cayenne pepper; pulse until evenly mixed.
  • Shape the mixture into 2-tablespoon-sized meatballs, making a total of about 48. Chill in the refrigerator until firm, approximately 1 hour.
  • In a large skillet over medium-high heat, fry meatballs in batches in hot oil until golden brown on all sides and heated through, around 10 minutes.
