Spicy jerk tofu bowl with roasted sweet potatoes, colorful peppers, and black beans - a vibrant and flavorful vegetarian meal.
Ingredients:
  • 2 cups white rice
  • 4 cups water
  • 1 large Sweet Potato, peeled and cubed
  • 3 tablespoons Coconut oil or Vegetable Oil, or as needed, divided
  • 1/2 Red Bell Peppersliced
  • 1/2 Green Bell Pepper, sliced
  • 1/2 Orange Bell Pepper, sliced
  • 1 package Extra Firm
  • 1 can Black Beans, drained and rinsed
  • Jerk Seasoning to taste
  • 2 tablespoons Jerk Marinade/Sauce
Instructions:
  • In a saucepan, gently simmer rice and water until tender and all liquid is absorbed, about 20 to 25 minutes. Keep rice warm.
  • Heat your oven to a toasty 450 degrees Fahrenheit (230 degrees Celsius).
  • Coat cubed sweet potatoes with 1 tablespoon of oil, then spread them out evenly on a baking sheet.
  • Bake sweet potatoes in the preheated oven until perfectly tender, about 15 to 20 minutes.
  • In a sizzling cast iron skillet, melt 1 tablespoon of aromatic coconut oil over medium-high heat. Toss in vibrant red, green, and orange bell peppers and cook for 2 to 3 minutes until they blossom with flavor. Remove the peppers from the skillet and set them aside for a pop of color and taste in your dish.
  • In the same skillet, melt the remaining tablespoon of coconut oil. Spread the tofu evenly and cook for 2 minutes before gently flipping to cook the other side. Keep cooking, turning occasionally, until the tofu gets slightly crispy around the edges, about 6 to 8 minutes.
  • Coat tofu generously with jerk marinade ensuring thorough coverage. Sear tofu until caramelized and then remove from heat.
  • Heat black beans in a microwave-safe dish for 2 to 3 minutes, stirring every 30 seconds, until hot.
  • Create vibrant grain bowls by evenly distributing rice, tofu, peppers, sweet potatoes, and black beans among each serving bowl.
